If this is something that you dont want then the only real way to control it is to change the Min and Max layer heights in your Printer Settings>Extruder settings. What I'm doing to solve it for now is just putting a big brim around the whole model to better anchor the organic support. You can adjust the brim of the support by increasing the "first layer expansion" setting from 3mm to (I use) 7mm.
